人参膳食纤维的营养成分和多糖结构及热稳定性研究 被引量:12

Study on Nutritional Ingredient, Polysaccharide Structure and Thermal Stability of Ginseng Dietary Fiber

摘要 以人参药渣为原料,按照国标方法提取了不同类型的人参膳食纤维,并对其营养成分、多糖结构和热稳定性质进行了研究。结果表明,人参药渣中总膳食纤维(G-TDF)含量达70%。其中水溶性膳食纤维(G-SDF)含量达10.24%,非水溶性膳食纤维(G-IDF)含量达60.77%。G-SDF和G-IDF均含有丰富的营养成分,包括糖类(51.36%/15.21%,G-SDF/G-IDF)、蛋白质(10.02%/11.42%,G-SDF/GIDF)、糖醛酸(18.04%/4.26%,G-SDF/G-IDF)和多种氨基酸,并且不含脂肪,可作为高营养低热量的食品原料。G-SDF和G-IDF具有较好的持水性和持油性等理化性质;能够耐受200℃以下的热加工处理。G-SDF和G-IDF还具有典型的孔洞结构和多糖官能基团,这些结构是其具有理想理化性质的结构基础。本研究为人参膳食纤维成为功能性食品原料提供了必要的理论依据。 Different types of ginseng dietary fibers were extracted according to the national standard method by using ginseng residue as raw material.Nutritional ingredient,polysaccharide structure and thermal stability of fiber samples were studied.The results showed that the total dietary fiber(G-TDF)content in ginseng medicine residues reached 70%.Among them,the content of ginseng soluble dietary fiber(GSDF)was 10.24%,and the content of ginseng insoluble dietary fiber(G-IDF)was 60.77%.Two of the fibers(G-SDF and G-IDF)were rich in nutritional ingregient,including sugars(51.36%/15.21%,G-SDF/G-IDF),protein(10.02%/11.42%,G-SDF/G-IDF),uronic acid(18.04%/4.26%,G-SDF/G-IDF),a variety of amino acids and no fat,which could be used as high nutrition and low calorie food ingredient.In addition,G-SDF and G-IDF had suitable physicochemical properties as water-holding and oil-holding capacity.They had three stages in their thermogravimetric curve and tolerated the hot processing temperature lower than 200℃.G-SDF and G-IDF also had typical porous microstructure and polysaccharide functional groups,which were the basis of their ideal physicochemical properties.The above research results provided necessary theoretical basis for the application of ginseng dietary fiber as functional food ingredients.
