摘要
近些年来,白茶由于独特的品质及特殊功能保健作用,受到人们广泛欢迎。贮存一定时间后,年份白茶更受市场认可。科研机构发现白茶N-乙基-2-吡咯烷酮取代的黄烷酮类(EPSF)成分作为近几年茶叶发现新的化合物,已成为白茶的热点。同时贮藏白茶也受到追捧。本文就EPSF化合物的研究进展和收藏白茶的相关注意事项进行了概述。
White tea is widely consumed in recent years because of its unique flavor and special bioactivities. White tea stored for a certain period(old white tea) is more and more popular in the market. New compound N-ethyl-2-pyrrolidinone-substituted flavanols(EPSF) found in white tea has become a hot issue. The research progress of EPSF compounds is reviewed and suggestions for collecting white tea are discussed.
