摘要
对甘蔗浓缩汁非糖营养成分进行分析,并与市面上几种风味糖产品进行比较。结果表明,甘蔗浓缩汁含有丰富非糖营养物质,包括氨基酸、活性成分多酚与黄酮、矿质元素等,且羟甲基糠醛(HMF)含量较低。在几种风味糖产品中,甘蔗浓缩汁在氨基态氮、总黄酮、HMF含量上有一定优势,是一种具有良好开发价值的产品。
The non-sugar nutritive components of sugarcane juice concentrate were analyzed and compared with several flavor sugar products in the market.The results showed that sugarcane juice concentrate contained rich nutrients,including amino acids,active ingredients,polyphenols,flavones and mineral elements,and the content of HMF was lower.Among several flavor sugar products,sugarcane juice concentrate has some advantages in amino nitrogen,total flavonoids and HMF content,which is a product with good development value.
