摘要
本研究旨在探讨日粮中添加木薯残渣对育肥后期肉牛生长性能、胴体特性和肉组成的影响。试验选择28头肉牛,随机分到4组,日粮中分别添加0%、6%、9%和12%的木薯渣。结果显示:日粮添加木薯残渣对肉牛生长性能无显著影响(P>0.05)。6%木薯残渣组血浆总胆固醇浓度显著高于其他处理组(P<0.05)。木薯残渣添加水平对肉牛胴体产量和品质性状无显著影响(P>0.05)。与其他处理相比,6%木薯残渣组最长肌长的亮度、红度、黄度值显著高于其他处理(P<0.05),同时粘结性、黏性、咀嚼力和弹性均较其他组低(P<0.05)。结果表明:在育肥后期肉牛日粮中添加木薯残渣对生长性能、胴体特征和最长肌组成无显著影响,但随着日粮中木薯残渣添加水平的升高,精料摄入量下降,且当日粮中木薯残渣添加水平超过6%时,对大理石纹评分几乎无改善作用。
The purpose of this study was to investigate the effects of adding cassava residue to the diet on growth performance,carcass characteristics and meat composition of beef cattle in late fattening period.Twenty-eight beef cattle were randomly assigned to four diets supplemented with 0%,6%,9%and 12%cassava residue,respectively.The results showed that the addition of cassava residue had no significant effect on the growth performance of beef cattle(P>0.05).The total plasma cholesterol concentration of 6%cassava residue group was significantly higher than that of other treatment groups(P<0.05).The addition level of cassava residue had no significant effect on carcass yield and quality(P>0.05).Compared with other treatments,the brightness,reddness and yellowness of the longest muscle in the 6%cassava residue group were significantly higher than those in other treatments(P<0.05),and their adhesiveness,viscosity,chewing power and elasticity were lower than those in other groups(P<0.05).Results show that adding tapioca residue in the late fattening beef cattle diet on the growth performance,carcass characteristics,and the longest muscle had no significant effect,but with the increase of cassava residue added level in the diet,feed intake,and when that day in the diet of cassava residue add level exceeds 6%,almost no effect on marbling score.
