摘要
本实验旨在研究瑶鸡的生长发育规律、屠宰性能并对其肉品质进行评价。采用Logistic、Gompertz和Von Bertalanffy 3种非线性模型对0~18周龄瑶鸡进行生长曲线拟合与分析,同时对18周龄瑶鸡的屠宰性能、肉品质指标进行分析。结果表明:Von Bertalanffy模型是拟合瑶鸡生长曲线的最佳模型,拐点周龄在10周龄,拐点体重为1 035.629 g。18周龄瑶鸡屠体重为1 600~1 900 g,屠宰率在87%~91%,胸肌率、腿肌率在21%~27%,均高于黄羽肉鸡一级标准。瑶鸡胸肌生肉的L值显著高于腿肌,a值显著低于腿肌;胸肌熟肉的剪切力值显著高于腿肌。瑶鸡胸肉和腿肉的L值、黏性低于广西三黄鸡,a值高于广西三黄鸡,胸肌熟肉的硬度、咀嚼性、剪切力值高于广西三黄鸡;腿肌熟肉的硬度、黏性、咀嚼性均低于广西三黄鸡。瑶鸡胸肌肉的粘结性、硬度感官评分显著高于腿肌肉,多汁性评分显著低于腿肌肉;瑶鸡胸肌肉的粘结性、硬度、香味、咸味的分数和腿肌肉的粘结性分数均高于广西三黄鸡。此外,瑶鸡鸡汤的咸味、鲜味分数高于广西三黄鸡。由此可知,瑶鸡最适生长曲线拟合模型为Von Bertalanffy,腿肌率、胸肌率较高,肉品质感官评价优于广西三黄鸡。
This experiment was to study the growth and development patterns, slaughtering performance and meat quality evaluation of Yao Chicken. The growth curves were fitted by three kinds of nonlinear models(Logistic, Gompertz, Von Bertalanffy), and the growth rules of 0-18 weeks old Yao Chicken were studied, and the slaughter performance and meat quality of the 18-weeks old were analyzed. The results showed that the Von Bertalanffy model was the best model to fit the growth curve. The inflection age was 10 weeks old, the inflection weight was 1 035.629 g, Yao Chicken’ slaughtering weight between 1 600 and 1 900 g, the slaughtering rate was 87%~91%. The breast muscle rate and the leg muscle rate was 21%~27%. it was higher than that of yellow feather broiler. There were significant differences in L value and a value of breast muscle and leg muscle in raw meat, and in shear force value of breast muscle and leg muscle in cooked. The L value and viscosity of Yao chicken’s breast and leg meat were lower than that of Guangxi Sanhuang chicken, and a value was higher than that of Guangxi Sanhuang chicken in raw meat. The hardness, chewiness and shearing force of breast muscle were higher than those of Guangxi Sanhuang chicken, and the hardness, viscosity and chewability of the leg muscle were lower than those of Guangxi Sanhuang chicken in cooked meat. The score of cohesiveness, hardness, aroma and salty of the breast muscles were higher than those of Guangxi Sanhuang chicken, the score of cohesiveness of leg muscles were higher than those of Guangxi Sanhuang chicken. The score of the salty and umami of Yao chicken soup was higher than that of Guangxi sanhuang chicken. In conclusion, the most suitable growth curve fitting model is Von Bertalanffy. The leg muscle rate and breast muscle rate of yao chicken are higher, and the sensory evaluation of meat quality is better than that of Guangxi sanhuang chicken.
