壳聚糖/海藻酸钠可食性保鲜膜的研究进展 被引量:10

摘要 近年来由于传统的塑料薄膜生物降解缓慢且污染严重,可食性保鲜膜受到越来越多的关注。可食性保鲜膜具有生物可降解性、环保、实用性好等特点,可应用于各种食品的保鲜,其中壳聚糖、海藻酸钠为常用的成膜材料。本文综述了壳聚糖/海藻酸钠可食性天然抗菌保鲜膜的研究进展,着重介绍材料的来源、分类、改进方向及其在果蔬和肉类保鲜中的应用,并且展望了可食性天然抗菌保鲜膜的研究前景。 In recent years, due to the slow biodegradation and serious pollution of traditional plastic film, the edible cling film had received more and more attention. Edible cling film has the characteristics of biodegradability, environmental protection, and good practicability which can be applied to the preservation of various foods. Chitosan and sodium alginate can used as film-forming materials. This article reviewed the research progress of chitosan/sodium alginate edible natural antibacterial fresh-keeping film, highlighted the source, classification, improvement direction and application of materials in the preservation of fruits, vegetables and meat. In addition, the research prospect of edible natural antibacterial cling film was prospected.
