UGC模式下“无地方性”饮食文化变迁——基于上海愚园路“网红”旅游餐饮的解读 被引量:6

Capturing“No Place”Food Cultural Changes from UGC——Based on the Interpretation of Yuyuan Road′s Catering in Shanghai City

摘要 拥有百年文化历史的上海愚园路地方饮食文化在城市更新的背景下发生了巨大变迁,旅游餐饮店的兴起展现了地方性与全球化力量的角力。从旅游消费产生的用户生成内容(UGC)出发,解读了愚园路旅游餐饮店的发展现状,探讨了UGC对愚园路历史文化风貌区饮食文化的影响。结果表明:①UGC带来了愚园路饮食文化的变迁。从物质层面来看,沿街民居、商铺等空间逐渐置换为饮食空间;从文化层面来看,旅游餐饮店在传承地方饮食文化的同时,也逐渐展现出全球化的特征。②UGC不断赋予愚园路新的形象价值,从富有人文历史的百年老路逐步转型为生活美学时尚街区。 The traditional food culture of Yuyuan Road in Shanghai City,which had a century-old culture,has undergone tremendous changes in the context of urban regeneration.The rise of tourist restaurants showed the game between local and global forces.The study started from the user-generated content(UGC)generated by tourists′consumption to interpret the development status of Yuyuan Road′s catering,and explored the impact of UGC on the food culture of historical cultural blocks.The results showed that:①UGC has brought about a change in the food culture of Yuyuan Road.From a material perspective,the residential spaces along the street,shops and other spaces were gradually replaced by catering spaces.From a cultural perspective,tourism restaurants were gradually showing the characteristics of globalization while inheriting the local food culture.②UGC has brought new image value to Yuyuan Road,and Yuyuan Road has gradually transformed from a century-old road with a rich cultural history to a fashion block for life aesthetics.
