摘要
利用德国Pe N3电子鼻检测自制灌肠产品在储藏期的品质变化,并与传统分析方法进行比较。结果表明,电子鼻检测系统和传统的感官、理化指标检测结果基本相同,灌肠在4℃条件下保存8 d开始发生变质,20℃灌肠发生变质速度快,在4 d后品质明显下降。
The German electronic nose PEN3 was used to detect the quality change of homemade enema products during storage,and compared with traditional analysis methods.The detection system of electronic nose and traditional physicochemical index test results were basically the same.In the condition of 4℃,occurring metamorphic at the 8 d,20℃enema metamorphic faster,on the 4 d the quality decreased.
