摘要
文章主要研究稻草尾菜青贮对育肥湖羊屠宰性能及肉品质的影响。试验选择5.5月龄、体重(39.11±1.16)kg、健康的湖羊16只,随机分为两组,每组各8只(公母各半)。试验组为稻草尾菜混贮饲料,以羊场粗饲料为对照组,按精粗比5:5进行饲喂,精饲料均由羊场提供。试验期共35 d,其中预试期7 d,正试期28 d。结果表明,混贮组育肥湖羊的屠宰率、净肉率显著低于对照组(P<0.05),但其胴体重、骨肉比、料肉比、眼肌面积等其他屠宰指标以及肌肉理化指标与对照组差异皆不显著(P>0.05)。混贮组育肥湖羊背最长肌的肌纤维直径显著低于对照组(P<0.05)、肌纤维密度则高于对照组,肌肉组织更细致。综上所述,稻草尾菜混贮育肥湖羊对其屠宰性能无明显的影响,但可在一定程度上提高育肥湖羊的细嫩度。
The paper mainly studied the effect of silage of straw and Chinese cabbage waste on slaughter performance and meat quality of fattening Hu sheep.In this study,sixteen healthy and strong Hu sheep aged 5.5 months and weighing(39.11±1.16) kg were selected.Hu sheep were randomly divided into two groups with 8 sheep in each group(half male and half female).The experiment used the sheep farm roughage as control group and used silage of straw and Chinese cabbage waste as mixed silage group.The experimental diet was fed at a ratio of refined grain to coarse(5:5).The experimental period was 35 days,including 7 days of pre-test period and 28 days of trial period.The results showed that:the dressing percentage and net meat percentage of the fattening Hu sheep in the mixed silage group were significantly lower than those in the control group(P<0.05),but the carcass weight,meat-bone ratio,feed meat ratio,eye muscle area and other slaughter indicators and the physical and chemical indexes were not significantly different from the control group(P>0.05).By observing the muscle fiber tissue morphology and analyzing the muscle fiber related parameters,it was found that the muscle fiber diameter in longus dorsi muscle in mixed silage group fattening Hu sheep was significantly lower than that of control group(P<0.05),the muscle fiber density was higher than that of the control group,and the muscle tissue was more tender.To sum up,the silage of straw and Chinese cabbage waste had no effect on the slaughter performance of Hu sheep.But it can improve the tenderness of fattening Hu sheep to some extent.
