摘要
为揭示焦甜焦香型烤烟外观特征(质量、区域)及其与内在质量的关系,对取自河南许昌、平顶山、漯河、南阳、驻马店5个产地的烤烟C2F烟叶样品外观特征和常规化学成分及感官质量指标进行了相关分析、逐步回归和通径分析。结果表明:(1)烟叶外观特征为底色白偏灰,厚度中等偏厚,蜡质感弱~中,叶片较柔软偏脆硬,叶面叶背色差中~小,叶尖叶基身份差小、少量中等,光泽亮,叶面组织较细腻,颜色深浅为桔黄;颜色桔黄,烟叶成熟,结构尚疏松,身份中等、部分稍厚,油分有,色度中偏强。各指标表现较稳定,一致性较高。(2)外观特征对常规化学成分和感官质量有直接作用,其中烟叶柔韧性越好,烟碱、总氮含量则越低;叶面叶背色差越小,还原糖、总糖含量则越高;蜡质感越强,香型则越显著,浓度越大;叶尖叶基身份差越小,焦甜香、辛香则越突出。因此影响焦甜焦香型烟叶风格及质量的关键外观特征指标为蜡质感和叶尖叶基身份差。
To reveal the relationship between leaf appearance and quality of flue-cured tobacco of burnt-sweet and burnt flavor types,correlation,gradual regression and path analyses were carried out on the leaf appearance characteristics,routine chemical components and sensory quality indexes of C2F tobacco samples collected from 5 planting areas(Xuchang,Pingdingshan,Luohe,Nanyang and Zhumadian in Henan).The results showed that:1)The leaf appearance was characterized by white to slightly grey background color,moderate to slight thickness,weak to medium wax texture,relatively soft to brittle-hard strength,moderate to slight color differences between front and back,minor to moderate leaf body differences between tip and base,bright luster,and relatively smooth leaf surface tissue.Additional characteristics included an orange shade to orange color of mature tobacco leaves,relatively loose leaf structure,moderate to slightly thick body,oily,moderate to strong color intensity.Each index was relatively stable and consistent.2)The appearance characteristics correlated directly with the routine chemical components and sensory quality.Among them,leaves with better flexibility had lower nicotine and total nitrogen contents.Leaves with smaller color differences between the front and back had higher reducing sugar and total sugar contents.A stronger wax texture indicated more significant flavor types and greater flavor concentration.A smaller leaf body difference between the tip and base showed more prominent burnt-sweet and spicy scents.Therefore,these key leaf appearance characteristic indexes indicated the style and quality of tobacco leaves of burnt-sweet and burnt flavor types,especially the wax texture and leaf body difference between the tip and base.
