武夷岩茶粗老叶与丹桂制备速溶花茶粉的工艺研究 被引量:3

Study on the Preparation of Instant Scented Tea Powder from Wuyi Rock Tea Old Leaves and Orange Osmanthus

摘要 为避免武夷岩茶下脚料粗老叶的资源浪费,促进闽北地方特产的开发和丰富茶饮料市场,以闽北地区特产——武夷岩茶的粗老叶和丹桂花为原料,制备速溶花茶粉。将丹桂浸提液与岩茶浸提液调配成花茶饮料,以感官评分为考察指标,通过响应面优化确定最优工艺参数,并通过冷冻干燥制备速溶花茶粉。结果表明花茶饮料的最优配方为:丹桂提取液与茶汤以(V/V)1:1复配,麦芽糊精添加量0.5%,柠檬酸添加量0.05%,白砂糖添加量3.69%。制备的速溶花茶粉呈粉末状,有光泽,干度好,在水中速溶;汤色呈鲜亮橙黄色,无杂质,香气清香纯正,滋味醇厚;茶粉的理化及感官指标均符合国标要求。 In order to avoid the wastage of resources of crude old leaves of Wuyi rock tea and promote the development of local specialty in the northern Fujian Province and enrich the market of the tea beverage,the instant scented tea powder was prepared by using the specialty in north of Fujian—old leaves of Wuyi rock tea and the orange osmanthus as the raw materials.By combining the extracted solution of orange osmanthus and the extracted solution of Wuyi rock tea into scented tea beverage and using the sensory score as the investigation index,the instant scented tea powder was prepared by freeze drying by determining the optimal process parameters through optimizing the response surface.The results show that the optimum formula of scented tea beverage was as follows:1:1 mix ratio of orange osmanthus extracted solution to tea soup(V/V),0.5%adding amount of maltodextrin,0.05%adding amount of citric acid,and 3.69%adding amount of sugar.The prepared instant scented tea powder is powdery with gloss and good dryness,instantly solved in water;the soup presents bright orange color,contains no impurities,has pure aromatic smell and mellow taste;the physical,chemical and sensory indicators of tea powder all meet the requirements of the national standard.
