摘要
本文以人参加工厂的废弃人参渣作为实验原料,采用双螺杆挤压膨化来改性并优化人参渣可溶性膳食纤维(SDF)的最优条件为:温度140℃,转速130r/min,含水量40%。在此条件下,SDF的提取率为34.5%。采用正交试验将人参水溶性膳食纤维(SDF)与辅料混合制备,通过调整配料的比例关系,制成口感佳,外观好的膳食纤维饮料。通过实验确定了最佳饮料配方为:按照重量份数计,将8份山梨糖醇、0.2份柠檬酸、0.25份羟甲基纤维素钠(CMC)、0.25份果胶、0.04份维生素C和100份可溶性膳食纤维和蒸馏水混合,得到混合物,混合物中SDF的最终浓度为6mg/mL。在此条件下制成的人参膳食纤维饮料口感与外观最佳。
In this paper,waste ginseng residue from ginseng processing plant was used as experimental raw material.The optimal conditions of modification and optimization of soluble dietary fiber(SDF)of ginseng residue by twinscrew extrusion were as follows:temperature 140℃,rotational speed 130r/min,and water content 40%.Under these conditions,the extraction rate of SDF was 34.5%.The water-soluble dietary fiber and excipients of ginseng were mixed and prepared by orthogonal experiment.By adjusting the proportion of ingredients,the dietary fiber beverage with good taste and good appearance was made.The optimal drink formula was determined by experiments as follows:8 parts sorbitol,0.2 part citric acid,0.25 part sodium hydroxymethyl cellulose(CMC),0.25 part pectin,0.04 part vitamin C and 100 parts soluble dietary fiber and distilled water were mixed according to the weight,and the final concentration of SDF in the mixture was 6mg/mL.The ginseng dietary fiber beverage made under these conditions has the best taste and appearance.
