摘要
无损检测技术可以在不破坏样品的前提下完成检测。目前已被国内外学者广泛应用于羊肉品质分析中。综述了国内外近年来羊肉品质无损检测技术的研究现状,从感官品质、理化指标、微生物指标、其他安全指标、掺假肉等5个方面,介绍了无损检测技术与应用,分析了存在的问题,并对其发展作出展望。
The test could be completedwithout destroying the sample by non-destructive testing technology,and it had been widely used by domestic and foreign scholars for the quality analysis of mutton.Research status of mutton quality non-destructive testing technology at home and abroad in recent years were reviewed.From sensory quality,physical and chemical indicators,microbiological index,other security index and adulterated meat,the non-destructive testing technology and its applications were introduced.The existing problems were analyzed,and the development was prospected.
