摘要
对蛋白酶酶解机理、多肽的吸收机制以及大豆多肽的生物活性进行了综述,以期为大豆多肽的综合开发利用提供借鉴。
The mechanism of protease enzymolysis,the absorption mechanism of peptides and the biological activity of soybean peptides have been reviewed in order to provide a reference for the comprehensive development and utilization of soybean peptides.
