摘要
为了提高和普及果蔬智能包装在果蔬贮藏过程中的应用,通过对近年来国内外针对果蔬新鲜度的可视化智能包装的研究现状和成果进行总结和分析,着重介绍了果蔬可视化智能包装的新鲜度检测机理,阐述了应用在智能包装中的气体敏感型指示剂和气体化学、生物传感器的种类、其作用机理以及在果蔬智能包装中的应用,并梳理总结了部分指示剂以及传感器在成本、安全性、普适性上的优缺点,最后提出了对今后智能包装多种技术融合开发的展望,如新鲜度指示剂和气调技术的结合,对果蔬新鲜度检测指示剂和传感器的研究有一定参考意义。
In order to improve and popularize the application of fruit and vegetable intelligent packaging in the storage process of fruits and vegetables,through the summary and analysis of the research status and results of visual intelligent packaging for fruit and vegetable freshness at home and abroad in recent years,it focuses on the freshness detection of fruit and vegetable visual intelligent packaging.Mechanism,expounds the gas-sensitive indicators and gas chemistry used in smart packaging,the types of biosensors,their mechanism of action,and their applications in smart packaging of fruits and vegetables,and summarizes the cost and safety of some indicators and sensors,the advantages and disadvantages of universal applicability,and finally put forward the prospects for the future integration and development of multiple technologies for smart packaging,such as the combination of freshness indicator and air conditioning technology,which has a certain reference significance for the research of fruit and vegetable freshness detection indicators and sensors.
