以淀粉为原料双酶法生产海藻糖的研究进展 被引量:1

摘要 双酶法生产海藻糖是指以淀粉为原料,在低聚麦芽糖基海藻糖合成酶和低聚麦芽糖基海藻糖水解酶两种酶的协同作用下,将一定链长的直链淀粉转化成海藻糖的技术。双酶法作为最早实现工业酶转化生产海藻糖的方法,起源于日本,具有原料便宜易得、工艺较成熟、不需要高能量化合物等优点。文章重点介绍了双酶法在国外(尤其是日本)及国内的发展及应用。随着生物基因工程技术的发展,越来越多性能优异的低聚麦芽糖基海藻糖合成酶和低聚麦芽糖基海藻糖水解酶被提取、优化和构建,为双酶法工艺的进一步完善和工业化提供了可能。 The production of trehalose by double-enzyme method is a kind of technology that takes starch as raw material and converts amylose with a certain chain length into trehalose under the synergistic action of Maltooligosyl Trahalose Synthase(MTSase)and Maltooligosyl Trahalose Trahalohydrolase(MTHase).As the earliest of industrial production of trehalose by enzymatic method,double-enzyme method originated in Japan with the advantages of low-coast raw materials,maturity technology and no need of high-energy compounds.This paper mainly introduces the development and application of double-enzyme method at abroad(especially in Japan)and in China.With the development of biotechnology and genetic engineering technology,more and more MTSase and MTHase with excellent performance have been constructed and extracted,which provides the possibility for the further improvement and application of double-enzyme method.
