摘要
此次试验旨在研究胰蛋白酶对养殖大黄鱼脱脂鱼卵蛋白的工艺。以脱脂鱼卵为原料,水解度和蛋白回收率为指标,在单因素试验基础上,通过正交试验优化胰蛋白酶酶解工艺。结果表明:最佳酶解工艺为pH 7.5、酶添加量4 500 U/g、料液比1︰9 (g/mL)、酶解温度45℃、酶解时间4 h,在此条件下,水解度达14.09%。此次试验为丰富鱼卵加工形式提供参考。
It was to study the process of defatting roe protein by trypsin in cultured large yellow croaker. On the basis of single factor test, the enzymatic hydrolysis of trypsin was optimized by orthogonal test with degreased fish roe as raw materials, and hydrolysis degree and protein recovery as indicators. The results showed that the enzymatic hydrolysis conditions were that the optimum pH of enzymatic hydrolysis was 7.5, the amount of enzyme added was 4 500 U/g, the ratio of feed to liquid was 1︰9(g/mL), the enzymatic hydrolysis temperature was 45 ℃, and the enzymatic hydrolysis time was 4 h. Under these conditions, the degree of hydrolysis reached 14.09%. This experiment provided a reference for enriching the processing form of fish roe.
