藜麦用于啤酒酿造的适宜性

摘要 近几年,国内啤酒工业发展迅猛,啤酒爱好者对使用新原料生产具有独特风味的啤酒越来越青睐,例如藜麦啤酒。藜麦含有全面且均衡的营养物质,十分符合当今健康的饮食观念,对藜麦啤酒的研究具有很好的应用前景。通过对藜麦含有的几种矿物质元素、蛋白质和氨基酸以及多种功能性营养成分的综合分析,期望酿造一款口感独特、集营养和健康于一体的藜麦啤酒。 In recent years, the domestic beer industry has been developing rapidly, and beer lovers are increasingly interested in producing beers with unique flavors using new ingredients, such as quinoa. Quinoa contains a comprehensive and balanced nutrition, which is very consistent with the concept of healthy diet today, and the research on quinoa beer has a good application prospect. Through the comprehensive analysis of several mineral elements, proteins and amino acids contained in quinoa as well as a variety of functional nutrients, we hope to brew a quinoa beer with unique taste, nutrition and health.
