武陵秦巴部分醇甜香型产区烤烟外观特征及其与常规化学成分和感官品质的关系 被引量:20

Flue-cured tobacco of bouquet-sweetness flavor type from Wuling and Qinba planting areas:relationships between leaf appearance with routine chemical components and sensory quality

摘要 为研究利用外观特征快速评判烟叶产区的可行性,以陕西安康、商洛,湖北恩施、宜昌,湖南湘西及重庆黔江等6个产地的24个烤烟C2F烟叶样品为试材,分析了醇甜香型烤烟的外观特征及其与内在品质的相关性。结果表明:①烟叶外观特征为底色白,厚度中等偏薄,蜡质感弱,叶片以较柔软为主、部分柔软,叶面叶背色差小,叶尖叶基身份差小、少量中,光泽亮偏鲜明,叶面组织细腻~较细腻,颜色深浅为桔黄~浅桔黄;颜色桔黄偏柠檬黄,烟叶成熟,结构以尚疏松为主、部分疏松,身份以中等为主、部分稍薄,油分有,色度中偏强。②烟叶外观特征与常规化学成分少数指标呈极显著正相关,叶片越柔软,氯含量(质量分数)相对越高;叶面组织越细腻,淀粉含量相对越高;油分越多,还原糖含量越高。③外观特征与感官品质总体关系较密切,叶面叶背色差越小,烟叶醇甜香韵越明显、焦甜香韵越弱,进而香型越显著,悬浮感越强;叶片越柔软,枯焦气越弱、烟气越细腻柔和;叶片结构越疏松,烟气越细腻柔和;油分越多,枯焦气越弱。因此,叶面叶背色差是影响醇甜香型烟叶风格的关键外观特征指标。 To distinguish the appearances of flue-cured tobacco leaves via planting areas rapidly,the appearance characteristics and their relationships with intrinsic leaf quality of 24 C2F leaf samples of bouquet-sweetness flavor type were collected from 6 planting areas(Ankang and Shangluo in Shaanxi,Enshi and Yichang in Hubei,Xiangxi in Hunan,Qianjiang in Chongqing).The analysis results showed that:(1)The leaf appearances were characterized by white background color,moderate to thin thickness,weak wax texture,relatively soft(for several samples)leaf,slight leaf color difference between front and back,minor to moderate(for several samples)leaf body difference between the tip and base,bright and slightly vivid luster,smooth to relatively smooth leaf surface texture,orange to light orange shade of color;orange to slightly lemon color,mature tobacco leaves,relatively loose and partial loose leaf structure,moderate(several samples were slightly thin)body,oily,moderate to slightly strong color intensity.(2)The appearance characteristics extremely significantly positively correlated to several routine chemical indexes of tobacco leaves,including the softer the leaf,the higher the chlorine content;the smoother the leaf tissue,the higher the starch content;the oilier the leaf,the higher the reducing sugar content.(3)There were relatively close relationships between appearance characteristics and sensory qualities.The slighter the leaf color difference between the front and back,the more obvious the bouquet-sweetness scent;the more significant the flavor type,the stronger the sense of suspension and the weaker the burnt-sweetness scent would be.In addition,the softer the leaf,the weaker the scorched odor,the smoother and milder the smoke would be;the looser the leaf structure,the more and milder the smoke would be;the oilier the leaf,the weaker the scorched odor would be.Therefore,the leaf color difference between the front and back was the key appearance characteristic index affecting the style of tobacco leaves of bouquet-sweetness flavor type.
