哈密地区奶疙瘩微生物多样性研究 被引量:1

Study on Microbial Diversity of Cheese in Hami Region Based on High-throughput Sequencing Technology

摘要 采用MiSeq高通量测序技术对采集自新疆维吾尔自治区哈密地区4个奶疙瘩样品中微生物多样性进行解析。结果表明,奶疙瘩中细菌门主要隶属于硬壁菌门(Firmicutes,44.47%)、变形菌门(Proteobacteria,41.63%)和放线菌门(Actinobacteria,5.77%);真菌门主要隶属于子囊菌门(Ascomycota,77.10%)、担子菌门(Basidiomycota,11.74%)和毛霉菌门(Mucoromycota,7.36%)。细菌属主要隶属于乳杆菌属(Lactobacillus,21.34%)、醋杆菌属(Acetobacter,12.44%)、不动杆菌属(Acinetobacter,9.86%)和乳球菌属(Lactococcus,9.06%);真菌属主要隶属于毕赤酵母属(Pichia,19.53%)、曲霉属(Aspergillus,18.94%)和耐碱酵母属(Galactomyces,15.87%)。核心分类操作单元(operational taxonomic units,OTU)中细菌类群主要以Lactobacillus、Acetobacter、Acinetobacter和Lactococcus为主,核心真菌类群主要以Pichia、Aspergillus和Backusella为主。 Miseq high-throughput sequencing technology was used to analyze the microbial diversity of four cheeses collected from the Hami region of Xinjiang Uygur Autonomous Region.Firmicutes(44.47%),Proteobacteria(41.63%)and Actinobacteria(5.77%)were the dominant bacterial phyla.Ascomycota(77.10%),Basidiomycota(11.74%)and Mucoromycota(7.36%)were the dominant fungal phyla.The bacterial genera mainly comprised Lactobacillus(21.34%),Acetobacter(12.44%),Acinetobacter(9.86%)and Lactococcus(9.06%).The fungal genera mainly comprised Pichia(19.53%),Aspergillus(18.94%)and Galactomyces(15.87%).The core operational taxonomic units(OTU)for bacteria were Lactobacillus,Acetobacter,Acinetobacter and Lactococcus.The core OTU for fungi were Pichia,Aspergillus and Backusella.
