摘要
分析黑木耳含有多糖、黑色素、腺苷类等多种生物活性物质,具有免疫调节、抗肿瘤、抗氧化、降血脂、防治心脑血管疾病等功能。综述其在食品、保健品、药品和化妆品等领域的开发现状;指出未来产品研发趋势:基于活性成分提取关键技术创新,可根据不同成分的活性作用定向开发黑木耳特色产品、复方配伍产品和益生发酵产品等。
Auricularia auricula is a famous medicinal and edible mushroom,which is not only crisp in taste and rich in nutrition but also contains a variety of bioactive substances such as polysaccharides,melanin,and adenosine,etc.Therefore,Auricularia auricular plays a health care and therapeutic role in immune regulation,antitumor,antioxidation,blood lipid reduction,prevention and treatment of cardiovascular and cerebrovascular diseases.In addition to being widely eaten as dishes by the public,Auricularia auricula is often used as a raw material for various deep-processing products.At present,a series of products have been developed in the fields of food,health care,medicine,and cosmetics.In this paper,the nutritional function of Auricularia auricula,the development status of deep processing products with Auricularia auricula as a raw material,and the future food research and development trend were summarized,which provided a reference for its further development and utilization.
