摘要
为研究甘薯果胶的制备工艺及其理化性质,本试验以两种甘薯渣为原料,分别用盐酸和磷酸氢二钠两种溶液提取果胶含量较高的甘薯渣。通过设定单因素条件,比较料液比、时间、温度和pH对果胶提取率的影响。结果表明:当本试验采用盐酸提取果胶时,各因素最佳条件为pH 2、时间2 h、料液比1:20和温度75℃,果胶提取率高达22.80%;采用磷酸氢二钠提取果胶时,各因素最佳条件为pH 7、时间4 h、料液比1:30和温度60℃,果胶的提取率高达21.10%。综上所述,在本试验条件下,以果胶提取率为指标,盐酸法提取效果较磷酸氢二钠法提取较好。
In this article,the preparation technology and physicochemical properties of sweet potato pectin were discussed.Two kinds of solutions,hydrochloric acid and disodium hydrogen phosphate were used to extract the high pectin content of sweet potato dregs 2.By setting single factor conditions,the effects of extraction conditions,such as material liquid ratio,time,temperature and pH,on pectin extraction rate were compared.The results showed that when hydrochloric acid was used to extract pectin,the optimum conditions were pH 2,time 2 h,ratio of material to liquid 1:20 and temperature 75℃,the highest extraction rate of pectin was 22.80%;when disodium hydrogen phosphate was used to extract pectin,the best conditions were pH 7,time 4 h,ratio of material to liquid 1:30 and temperature 60℃,the highest extraction rate of pectin was 21.10%.To sum up,under the conditions of this experiment,taking pectin extraction rate as index,hydrochloric acid method was better than disodium hydrogen phosphate method.
