摘要
紫玉米是玉米新品种,除基本营养成分外,还富含花青素、多糖等活性成分,这些活性成分具有多种营养保健功能。该文综述了紫玉米活性成分提取、活性成分测定及活性成分功能研究进展。
Purple corn was a new variety of corn.In addition to the basic nutritional components,it was also rich in anthocyanins,polysaccharides and other active components,which had a variety of nutritional and health functions.In this paper,the extraction,determination and function of purple corn were reviewed.
