摘要
目前水产品生产中滥用抗生素、以次充好、以假乱真等现象时有发生。水产品溯源技术在保证水产品质量安全方面起着非常重要的作用,利用该技术可以在食品安全事件发生后,第一时间找到问题源头,从而对安全事件进行更好地分析,进而保护消费者的合法权益。文章主要从物理、化学、生物等3个方面对水产品溯源技术的研究进展进行归纳总结,并对水产品溯源技术未来的发展趋势进行了展望。
Farmed aquatic product is a widely traded commodity.Aquaculture industry is also one of industries with rapid growth in recent years.However,abuse of antibiotics in aquatic products,shoddy or fake aquatic products occur all the time.The traceability technology of aquatic products plays an important role in the quality and safety of aquatic products.This technology can be used to find the source of the problem which would be helpful to protect the legitimate rights and interests of consumers in the first time after the occurrence of food safety incidents.This article summarizes the traceability technology of aquatic products from physics,chemistry and biology aspects,and prospects the future development trend of this technology.
