南岳云雾茶中茶多酚含量的水浴浸提法工艺优化研究 被引量:4

摘要 为服务于南岳云雾茶的开发利用,本研究以南岳云雾茶为试验材料,利用酒石酸亚铁法测定茶多酚的含量,研究料液比和浸提时间对南岳云雾茶茶多酚浸提率的影响,优化南岳云雾茶茶多酚提取工艺,并确定南岳云雾茶茶多酚的含量水平。结果表明:料液比1∶60、浸提时间10 min,南岳云雾茶的茶多酚提取率最高,达到20.71%。该方法操作简便,快速安全,重复性与稳定性好,可作为快速测定南岳云雾茶中茶多酚的一种方法。 In order to serve the development and utilization of Nanyue Yunwu tea,the experiment was conducted with Nanyue Yunwu tea as material,the content of tea polyphenols was determined by ferrous tartrate method,the effects of the material-to-liquid ratio and extraction time on the extraction rate of tea polyphenols from Nanyue Yunwu tea were studied,to optimize the extraction process of polyphenols from Nanyue Yunwu tea.The results showed that the optimum extraction conditions of tea polyphenols from Nanyue Yunwu tea were as follows:the ratio of material-to-liquid was 1∶60 and the extraction time was 10 min.Under the optimum conditions,the extraction rate of tea polyphenols from NanyueYunwu tea was 20.71%.The above method is simple,rapid,safe,repeatable and stable,which could be used as a rapid method for the determination of tea polyphenols in Nanyue Yunwu tea in future.
