红糖澄清工艺的正交试验优化研究

摘要 为探索红糖最优工艺参数,以磷酸添加量、主灰pH和絮凝剂的添加量作为关键研究参数,以澄清汁的浊度、纯度、pH、沉降效果为主要验证指标,通过正交试验研究澄清环节的关键参数。研究结果表明,红糖最佳澄清条件为:絮凝剂添加量为1.5 mg/kg,磷酸添加量为200 mg/kg,主灰pH为7.4。在此最佳工艺下澄清汁的浊度为21 MAU,纯度为87.32%,pH为7.41,沉降效果最优。 In order to explore the optimal process parameters of brown sugar,the addition of phosphoric acid,the pH of main liming and the addition of flocculants were studied as key parameters through orthogonal experiments,and the turbidity,purity,pH,and sedimentation effect of the clarified juice were used as the main verification indicators.The results showed that the best clarification conditions for brown sugar were as follows:the addition of flocculant was 1.5 mg/kg,the addition of phosphoric acid was 200 mg/kg,and the pH of main liming was 7.4.Under this optimal process,the turbidity of the clarified juice was 21 MAU,the purity was 87.32%,the pH was 7.41,and the best sedimentation effect could be achieved.
