多不饱和脂肪酸组合对滩羊肉品质、血清抗氧化指标及背最长肌共轭亚油酸含量的影响 被引量:10

Effects of Polyunsaturated Fatty Acid Combination on Meat Quality,Serum Antioxidant Indexes and Conjugated Linoleic Acid Content in Longissimus dorsi of Tan Sheep

摘要 本试验为了探究多不饱和脂肪酸组合对滩羊肉品质、血清抗氧化指标及背最长肌共轭亚油酸含量等的影响,选取4月龄左右的滩羊公羔27只,随机分为3组,分别为对照组(基础饲粮)、试验Ⅰ组(基础饲粮+1%大豆油+1%裂壶藻粉)、试验Ⅱ组(基础饲粮+1%亚麻油+1%裂壶藻粉),测定每组平均日增重、肉品质、血清抗氧化指标以及背最长肌共轭亚油酸含量。预试期15 d,正试期60 d。结果表明:与对照组相比,在饲粮中添加富含多不饱和脂肪酸(PUFA)的油脂组合对滩羊平均日增重影响不显著(P>0.05);试验Ⅰ组、试验Ⅱ组剪切力显著低于对照组(P<0.05),肉色红度(a*)值显著高于对照组(P<0.05)且试验Ⅱ组亮度(L*)值显著低于试验Ⅰ组和对照组(P<0.05),此外,2个试验组的大理石花纹评分高于对照组;添加混合油脂对滩羊血清抗氧化指标无显著影响(P>0.05);试验Ⅱ组背最长肌反11-油酸含量较其他2组高,试验Ⅰ组、试验Ⅱ组共轭亚油酸(CLA)含量显著高于其他2组(P<0.05),且2个试验组二十碳五稀酸(EPA)和二十二碳六稀酸(DHA)的含量也有所增加;3组间背最长肌n-3多不饱和脂肪酸(n-3PUFA)含量差异不显著(P>0.05),试验Ⅰ组C18∶3n-3含量较其他组高,试验Ⅱ组C20∶3n-6含量也较其他组高。综上所述,在饲粮中添加大豆油+裂壶藻粉、亚麻油+裂壶藻粉富含PUFA的油脂组合在不影响滩羊生长性能、血清抗氧化指标的情况下,可提高滩羊肉质嫩度、改善肉色,亦能使肌内脂肪分布更加均匀且有利于肌内CLA的含量增加。 In this experiment,in order to explore the effects of the combination of polyunsaturated fatty acids on the meat quality,serum antioxidant indexes and conjugated linoleic acid content in longissimus dorsi of Tan sheep,27 Tan sheep male lambs at 4 months of age were randomly divided into three groups as the control group(basic diet),test groupⅠ(basic diet+1%soybean oil+1%schizochytrium powder),and test groupⅡ(basic diet+1%linseed oil+1%schizochytrium powder)were measured for daily weight gain,meat quality,serum antioxidant indexes and conjugated linoleic acid content of each group.The pre-experiment lasted for 15 days and the experimental period lasted for 60 days.The results showed that compared with control group,the average daily weight gain of Tan sheep in the diet with the fat-rich polyunsaturated fatty acid(PUFA)combination had no significant effect(P>0.05);the meat shear force of the test groupⅠand test groupⅡwas significantly lower than that of the control group(P<0.05),and the redness(a*)value was significantly greater than that of the control group(P<0.05),and the lightness(L*)value of the test groupⅡwas significantly lower than that of the test groupⅠand the control group(P<0.05).In addition,the marbling scores of the two test groups was higher than that of the control group.The content of trans-11 vaccenic acid in longissimus dorsi in test groupⅡwas higher than that of the other two groups,and the content of conjugated linoleic acid(CLA)in test groupⅠand test groupⅡwas significantly higher than that of the others two groups(P<0.05).The contents of eicosapentaenoic acid(EPA)and docosahexaenoic acid(DHA)in longissimus dorsi in the two test groups also increased;n-3 polyunsaturated fatty acids(n-3PUFA)content among three groups had no significant effect(P>0.05).The content of C18∶3n-3 in longissimus dorsi in test groupⅠwas higher than that of other groups,and the content of C20∶3n-6 of test groupⅡwas higher.To sum up,adding soybean oil+schizochytrium powder,linseed oil+schizochytrium powder to the diet can improve Tan sheep tenderness and improve flesh color,and can also make the intramuscular fat distribution more even and help increase the content of intramuscular CLA without affecting the growth performance of Tan sheep and the antioxidant capacity of serum.
