麻竹叶水溶性膳食纤维的提取工艺及理化特性研究 被引量:4

Study on Extraction Process and Physicochemical Properties of Water-Soluble Dietary Fiber from Dendrocalamus latiflorus Munro Leaves

摘要 以高浓度乙醇提取黄酮后的麻竹叶残渣为原料,采用响应面法优化了麻竹叶SDF的超声辅助碱法提取工艺,并测定了SDF的持水力、膨胀力及持油力等特性。结果表明,在超声功率为250 W时,SDF的最佳提取工艺为:时间68 min、温度66℃、料液比1∶19(g/mL)、NaOH浓度8.5%;在此条件下,麻竹叶SDF的得率为45.18%,与该条件下预测值(45.41%)的相对误差为0.51%;且麻竹叶SDF的持油力达到4.14 g/g,表现出了较好的性能。 Response surface methodology(RSM)is used to optimize the ultrasound-assisted alkali extraction process of soluble dietary fiber(SDF)from Dendrocalamus latiflorus Munro leaves with the residues of Dendrocalamus latiflorus Munro leaves after extracting flavonoids with high-concentration ethanol as the raw materials and the water holding capacity,expansive force and oil holding capacity of SDF are measured.The results show that when the ultrasonic power is 250 W,the optimum extraction process is the extraction time of 68 min,the temperature of 66℃,the solid-liquid ratio of 1∶19(g/mL)and the NaOH concentration of 8.5%.Under these conditions,the yield of SDF of Dendrocalamus latiflorus Munro leaves is 45.18%,the relative error of the predicted value(45.41%)is 0.51%,and the oil holding capacity of SDF of Dendrocalamus latiflorus Munro leaves reaches 4.14 g/g,showing a good performance.
