摘要
随着生命科学领域研究的深入,抗氧化的重要性日益被人们广泛认知。红茶作为一种广受人们喜爱的健康饮品,富含茶多酚、茶色素等多种抗氧化活性成分,可以通过直接消除自由基、络合金属离子、调节生物酶系的活性等途径起到抗氧化作用,对于人体来说是一种有价值的抗氧化剂来源。文章通过查阅近十几年来红茶抗氧化相关文献,对红茶抗氧化活性有效成分及其作用机制进行系统的归纳总结,期望为未来红茶的科学生产消费提供理论参考。
With the development of bioscience,the importance of antioxidant has been widely recognized.Black tea,as a popular health drink,is an excellent source of tea polyphenols,tea pigments and other antioxidant ingredients.It can play an antioxidant role in the human body by eliminating free radicals directly,chelating metal ions,regulating the activity of biological enzymes and so on.In terms of antioxidant activity,it is a valuable source of antioxidant for the human body.In this paper,effective ingredients and action mechanism of black tea were systematically summarized by referring to the literature about black tea antioxidant activity during the nearly ten years,hoping to provide a theoretical reference for the scientific production and consumption of black tea in the future.
