摘要
探讨了红美人柑橘果实大小与品质之间的关系。收集浙江省象山县红美人产区9个果园的红美人果实,按照横径分为大果(≥90 mm)、中果(75~90 mm)、小果(≤75 mm)3个级别。分析了果实横径、单果重、色泽指数(CCI)、可溶性固形物含量、可滴定酸含量几个指标之间的相关性,并采用电子舌模糊感官评价方法评估了不同大小的红美人果实综合风味品质的差异。结果表明:对于同一果园的红美人果实,9个果园的果皮CCI均为大果>中果>小果;9个果园中有8个果园的果实可溶性固形物含量表现为小果>中果和大果;可滴定酸含量因果园而异,部分果园的小果可滴定酸含量明显高于中果和大果,部分果园则相反,还有部分果园无差异。然而,将9个果园的大、中、小果合并进行分析,结果表明,果实大小与可溶性固形物含量、可滴定酸含量之间相关性极小,与CCI之间存在一定的正相关性(相关系数R^(2)为0.5152)。电子舌模糊感官评价能区分部分果园的大、中、小果,但未能区分混合来源的大、中、小果。综上,果园的树体以及栽培管理水平等因素对于果实风味品质具有非常重要的影响,按照果实大小进行分级可初步评估相同栽培管理水平下的红美人果实风味品质,但是对于混合来源的果实,需进一步进行内部品质评估才能进行准确分级。
Present study investigated the relationship between the fruit size and the taste quality of‘Hongmeiren’citrus.The‘Hongmeiren’citrus fruit from 9 orchards collected from Xiangshan County of Zhejiang Province were classified according to the size into large fruit(≥90 mm),medium fruit(75~90 mm)and small fruit(≤75 mm).The correlations among fruit size,fruit weight,rind color index(CCI),total soluble solids(TSS)and titratable acids(TA)were evaluated,and the general taste quality of fruit were compared by applying electronic tongue taste sensing system.The results showed that,fruit from all the orchard showed the rule as CCI value of large fruit>medium fruit>small fruit,and fruit from 8 of the 9 orchard showed the rule as TSS value of small fruit>medium fruit and large fruit for the fruit from the same orchard.The correlation between TA content and fruit size varied among different orchards.However,the results of pooled analysis by mixing all the fruit from 9 orchards showed that,there was weak correlation between fruit size and TSS or TA contents,while positive correlation between fruit size and CCI value was found(R^(2)=0.5152).The large fruit,medium fruit and small fruit from the same orchard showed different electronic tongue taste sensing characteristics,while the pooled sample from a mixture of 9 orchards showed similar electronic tongue taste sensing characteristics.To sum up,the fruit size classification was reliable and practical in preliminary determination of the fruit taste quality from the same orchard with similar cultivation management.However,further inner quality evaluation was necessary for the accurate classification of‘Hongmeiren’citrus.
