摘要
为了提高辣条中苯并(a)芘含量测定的准确度,避免前处理过程中原料面粉由于糊化对测定结果产生影响,本文根据辣条产品的特点建立了检测辣条中苯并(a)芘含量的高效液相色谱方法。本方法优化了样品的提取方式,样品在加入水湿润后加乙醇避免乳化,进一步用正己烷提取。结果表明,在0.1~20.0 ng/mL苯并(a)芘的浓度与色谱峰面积呈良好的线性关系,相关系数在0.999 9以上;辣条中苯并(a)芘加标回收率为86.3%~93.3%;市售辣条苯并(a)芘的检出率为93.3%。该方法回收率高,重复性好,测定结果准确,适合用于辣条中苯并(a)芘的测定。
In order to improve the accuracy of determination of benzo (a) pyrene in spicy strips and avoid the influence of gelatinization of raw flour on the determination results in the pretreatment process,a method for determination of benzo (a) pyrene in spicy strips by high performance liquid chromatography was established according to the characteristics of spicy strips.In this method,the extraction method of the sample was optimized.After adding water and wetting,ethanol was added to avoid emulsification,and the sample was further extracted with n-hexane.The results showed that there was a good linear relationship between the concentration of benzo (a) pyrene and the peak area in the range of 0.1~20.0 ng/mL;the recovery of benzo (a) pyrene in spicy strips was 86.3%~93.3%;the detection rate of benzo (a) pyrene in commercial spicy strips was 93.3%.The method has high specificity,high recovery and good repeatability,suitable for the determination of benzo (a) pyrene in spicy strips.
