紫花苜蓿发酵草粉对黑猪生长性能、血清生化指标及肉质品质的影响 被引量:7

摘要 [目的]通过在黑猪基础日粮中添加不同比例的紫花苜蓿发酵草粉(medicago sativa L.),研究紫花苜蓿发酵草粉对黑猪生长性能、血清指标、猪肉品质的影响。[方法]选用健康商品黑猪120头,按试验要求随机分为4组,每组3个重复,每个重复10头猪。预饲期30 d,饲喂期150 d,分别饲喂含不同比例(0%、10%、20%、30%)紫花苜蓿发酵草粉的基础饲料。[结果]在生长性能方面,虽然紫花苜蓿发酵草粉在饲喂初期减缓了黑猪增重速率,但对饲喂终点黑猪体重无显著影响;在血清指标方面,紫花苜蓿草粉的添加可显著影响HDL-C、ALB、GPT、LDL-C等含量,且10%与20%添加量组影响效果不同;在氨基酸组成中,10%添加量组的黑猪猪肉中总氨基酸含量最高,为(502.83±31.54) mg/g,EAA/TAA、EAA/NEAA值与对照组无显著差异,但显著高于20%添加量组;在脂肪酸组成中,MUFA含量最高,且10%、20%添加量组的黑猪猪肉中MUFA含量显著高于对照组,而20%添加量组的PUMA含量显著高于对照及10%组;在风味物质组成分析中,挥发性成分的种类及含量上,10%添加量组显著高于对照组,而20%添加量组显著低于对照组。[结论]在基础饲料中添加适量的紫花苜蓿发酵草粉对增重无显著影响,但可通过调节猪的生理机能,提高猪肉的氨基酸、MUFA含量,提高黑猪猪肉的品质及风味特性。 [Objectives] To study the effects of alfalfa fermented grass meal(Medicago sativa L.) on growth performance,serum indices and pork quality of black pigs by adding different proportions of alfalfa fermented grass meal in basic diet.[Methods]A total of 120 healthy black pigs were randomly divided into 4 groups with 3 replicates per group and 10 pigs per replicate.The prefeeding period was 30 d,and the feeding period was 150 d,respectively.The pigs were fed the basal diets containing different proportions(0%,10%,20%,30%) of alfalfa fermented grass meal.[Results] In terms of growth performance,Alfalfa fermented grass meal slowed the weight gain rate of black pigs at the beginning of feeding period,but had no significant effect on the body weight of black pigs at the end point of feeding(P>0.05).Among the serum indexes,the supplementation of alfalfa meal significantly affected the contents of HDLC,ALB,GPT and LDL-C,and the effects of 10% and 20% alfalfa meal supplementation were different(P<0.05).In terms of amino acid composition,the total amino acid content in the 10% supplemental level group was the highest(502.83±31.54) mg/g,and the EAA/TAA and EAA/NEAA values were not significantly different from those in the control group(P>0.05),but was significantly higher than that in 20%supplemental level group(P<0.05).In fatty acid composition,MUFA content was the highest,and the content of MUFA in 10% and 20 % supplemental groups was significantly higher than that in control group(P<0.05),and PUMA content in 20% supplemental level group was significantly higher than that in control group and 10% group(P<0.05).In the analysis of flavor composition,the types and contents of volatile components in 10% supplemental level group were significantly higher than those in control group,while20% supplemental level group was significantly lower than those in control group(P<0.05).[Conclusions] The results indicate that adding an appropriate amount of fermented alfalfa in the basic diet has no significant effect on weight gain,but can improve the content of amino acids and MUFA,and improve the quality and flavor characteristics of black pig meat by regulating the physiological function of Black pigs.
