摘要
酶联免疫吸附法(ELISA)是检测食物过敏原最常用、最成熟的免疫学分析方法之一。ELISA通常分为夹心ELISA、竞争/抑制ELISA、直接ELISA和间接ELISA等几类,常用于牛乳、鸡蛋、花生、小麦和大豆等食物中过敏原的检测。基于抗原/抗体的特异反应将待测物与酶连接,酶与底物反应导致颜色变化,结合荧光检测技术实现定量检测。综述ELISA的原理和应用研究,旨在为食品中过敏原的快速、痕量检测提供技术方向,以期促进食物过敏原检测方法研究,有利于保障过敏患者的食品安全。
Enzyme-linked immunosorbent assay(ELISA)is one of the most commonly used and most mature immunological analysis methods for the detection of food allergens.ELISA is usually used for the detection of allergens in foods such as milk,eggs,peanuts,wheat and soybeans,which includes sandwich ELISA,competition/inhibition ELISA,direct ELISA and indirect ELISA.Based on the specific reaction of antigen/antibody,the analyte is connected to the enzyme.And the reaction of the enzyme and the substrate causes the change of color,then quantitative detection is achieve by fluorescence detection technology.The research progress of the principle and application of ELISA is reviewed,and looking forward to providing technical direction for rapid and trace detection of allergens in food,promoting the research of food allergen detection methods,and making sure the food safety of allergic patients.
