摘要
利用植物乳杆菌XCT1-1细菌素粗提物、阿奇霉素对鸡肉中耐药性大肠杆菌的抑制作用进行探测研究.选定细菌菌落总数、pH、TVB-N、持水力等4个指标判定细菌素粗提物对鸡肉本身安全性的影响.由此得出,单独添加XCT1-1粗提物或与阿奇霉素混合添加可明显抑制鸡肉中细菌的生长繁殖.和对照组进行对比,第10 d时单独添加XCT1-1粗提物或与阿奇霉素共同添加的处理组细菌菌落总数分别降低了1.45 log CFU/g和2.25 log CFU/g,TVB-N值降低了31.40%和39.38%,持水力降低速率减缓了10.87%、28.87%,且延缓了pH的增加.各项指标反映菌株XCT1-1细菌素粗提物单独使用或者和阿奇霉素协同作用能使感染耐药性大肠杆菌的鸡肉货架期延期2~4 d.本研究证实植物乳杆菌XCT1-1细菌素粗提物可有效控制鸡肉中感染的耐药性大肠杆菌生长,为乳酸菌生物制剂替代抗生素的研究提供理论依据.
The inhibition effect of the crude extract of Lactobacillus plantarum XCT1-1 bacteriocin and azithromycin on the drug-resistant Escherichia coli on chicken surface was studied.The effects of bacteriocin crude extracts on chicken safety were evaluated by measuring the total number of bacterial colonie,pH,TVB-N,water holding capacity.The results showed that the bacteriocin crude extract alone or mixed with azithromycin could effectively control the growth of bacteria in chicken.Compared with the control group,on the 10th day,the total number of bacterial colonies in the treatment group with bacteriocin crude extract alone or together with azithromycin decreased by 1.45 log CFU/g and 2.25 log CFU/g respectively.Simultaneously,the TVB-N decreased by 31.40%and 39.38%,and the reduction rate of water holding capacity decreased by 10.87%and 28.87%.And the increase of pH was delayed.These indicators indicated that the crude extract of strain XCT1-1 bacteriocin alone or together with azithromycin could prolong the shelf life of chicken infected with drug-resistant E.coli by 2~4 d.This study showed that the crude extract of strain XCT1-1 bacteriocin possessed efficient antibacterial effect on chicken infected with drug-resistant E.coli.It would provide a theoretical basis and reference value for the research of LAB biological agents to replace antibiotics.
