摘要
酱香型白酒因其独有的酱香风味闻名于世,随着生活水平的提高,“适量饮酒,有益健康”已经达成了共识,因此提升饮酒舒适度是当前研究的重点。本研究通过招募志愿者,设计、收集问卷,对不同酱香型白酒中的风味成分进行定量并与问卷结合分析相关性。结果显示,酱香型白酒中适当含量的醇类和酯类不会对白酒饮后舒适度造成很大影响,较高含量的高级醇如正己醇、正丁醇会降低饮后舒适度。正丁醇、正丙醇、正己醇等可作为影响饮后舒适度的负向因子,四甲基吡嗪、3-羟基-2-丁酮、丙酮等可作为正向因子。
Jiangxiang Baijiu is famous for its unique flavor.With the improvement of people’s living standards,a consensus has been reached that drinking moderately is good for the health.This study recruited volunteers and designed questionnaires to analyze the correlation between the flavor components in Jiangxiang Baijiu and its post-drinking comfort level.The results show that proper content of alcohols and esters in Jiangxiang Baijiu will not affect the post-drinking comfort level,but high content of higher alcohols such as n-butanol and 1-hexanol will reduce the comfort level.In conclusion,n-butanol,n-propanol,1-hexanol,etc.are the negative factors influencing the post-drinking comfort level,and 2,3,5,6-tetramethylpyrazine,acetoin,acetone,etc.are the positive factors.
