高压电场在葡萄与葡萄酒加工中的应用及研究进展 被引量:4

摘要 随着人们生活水平的提高,新型食品加工技术层出不穷。近年来,高压电场作为一种新型非热食品加工技术在葡萄与葡萄酒加工中成了研究热点。本文通过阐述高压电场在食品加工中的基本原理,对葡萄保鲜以及葡萄酒酿造中的浸渍过程、微生物群落与催陈作用等的影响进行了综述,充分表明高压电场技术在葡萄与葡萄酒产业中巨大的应用潜力。针对高压电场技术在葡萄与葡萄酒加工中存在的问题,提出解决方案,为该技术在葡萄与葡萄酒产业中更好的应用与发展提供参考。 With the improvement of people's living standards,new food processing technologies emerge continuously.As a new type of non-thermal food processing technology,high-voltage electric field technology has become a research hotspot in grape and wine processing in recent years.In this paper,the basic principles of highvoltage electric fields in food processing,the effects of fresh fruit preservation,and maceration process,microbial community in brewing,and wine aging were reviewed,it demonstrated fully the huge application potential of highvoltage electric field technology in grape and wine industry.Aiming at the problems existing in the high-voltage electric field technology in grape and wine processing,put forward the solutions to provide reference for the better application and development of this technology in grape and wine industry。
