黑果腺肋花楸不溶性膳食纤维化学提取工艺及其理化特性的研究 被引量:3

Study on the extraction and physicochemical properties of insoluble dietary fiber from Aronia melanocarpa

摘要 以黑果腺肋花楸果渣为原料,采用酸法和碱法制备不溶性膳食纤维,并测定这两种方法的化学成分、持水,持油和溶胀能力。最终结果如下:酸法最佳工艺为pH为3,反应温度为60℃,反应时间为90min,不溶性膳食纤维的得率为81.28%,碱法最佳工艺为pH为10.5,反应温度为40℃,反应时间为120min,不溶性膳食纤维的得率为81.18%,之后对两组方法提取的IDF测定了化学成分,表明两种提取方法使其中的蛋白质,灰分等发生变化。之后对功能特性如持水力,膨胀力和持油性进行测定也有差异。其中碱法提取的不溶性膳食纤维的功能特性略强于酸法提取,但是都有良好的功能特性,结果表明化学提纯的黑果腺肋花楸不溶性膳食纤维有很大的应用前景,值得我们深入的进行研究。 The insoluble dietary fiber was prepared by acid and alkali methods from the fruit residue of Aronia melanocarpa. The chemical composition,water retention,oil retention and swelling capacity by two extraction methods were measured. The best results for acid extraction method were :the yield of insoluble dietary fiber was 81.28% when pH value was 3,reaction temperature was 60℃ and reaction time was 90min;the best result from alkali extraction were :the yield of insoluble dietary fiber was 81.18% when pH value was 10.5,reaction temperature was 40℃ and reaction time was 120min. Chemical composition of IDF extracted by two methods showed that the protein and ash content were changed after extraction. Functional properties such as water holding capacity,swelling capacity and oil holding capacity were also different. The functional characteristics of insoluble dietary fiber extracted by alkali method were slightly stronger than that extracted by acid method,but they all had good functional characteristics. The results show that purified insoluble dietary fiber has great application prospects and is worth of further study.
