摘要
随着新时代的不断进步,精酿啤酒正在蓬勃发展,人们对功能型啤酒的需求也在不断提高。透明质酸作为一颗进入食品原料市场的“新星”,越来越多的人开始关注可食用透明质酸,将其与啤酒相结合,这对于啤酒和透明质酸都是一种创新。透明质酸的来源和添加方式对于成品啤酒都有一定的影响。在不同的时期添加透明质酸,最终成品酒中的透明质酸保留量不同,成品酒的品质和风味也各不相同,所使用的技术也有差别。因此,文章将从透明质酸来源和透明质酸加入啤酒中的工艺技术两方面进行综合论述,以为后续对于透明质酸食用及透明质酸啤酒的研究提供一定帮助。
With the continuous development of the market,craft beer is booming,and people’s demand for functional beer is also increasing.As a“new star”entering the food raw material market,more and more people have begun to pay attention to edible hyaluronic acid and combine it with beer,which is an innovation for both beer and hyaluronic acid.The source of hyaluronic acid and the added way have a certain impact on the finished beer.When hyaluronic acid is added in different periods,the amount of hyaluronic acid retained in the final finished beer is different,the quality and flavor of the finished beer are also different,and the technology used is also different.Therefore,this article will comprehensively discuss the source of hyaluronic acid and the process technology of adding hyaluronic acid to beer,so as to provide certain help for the subsequent research on hyaluronic acid consumption and hyaluronic acid beer.
