大肠菌群快速检测技术在营养与食品卫生检测中的应用效果观察 被引量:1

摘要 目的 分析营养与食品卫生检测中的大肠菌群的检测结果,评价大肠菌群快速检测技术的应用价值。方法 选取随机抽取512份食品作为样品,进行卫生检测,应用大肠菌群快速检测技术,经过稀释液配制、乳糖发酵、分离培养后,测定大肠菌群值。同时应用最可能数法进行检测,分析两种检测结果,按照相关标准,评价受检样品是否符合食品卫生的质量标准。结果 应用乳糖胆盐发酵法和最可能数法检测后,存在大肠菌群超标的不合格样品的检出率分别为7.62%(39/512)、8.40%(43/512),组间无显著差异(P> 0.05)。通过对检测结果统一性的分析,98.24%的样品检测结果统一,1.76%的样品检测结果不统一。结论 在营养与食品卫生检测中,应用大肠菌群快速检测技术,能够高效、准确检出大肠菌群值,进而发现大肠菌群超标问题,及时予以处理,防止食品卫生不合格的产品被人们食用,充分保障饮食安全。 Objective To analyze the detection results of coliform in nutrition and food hygiene detection,and evaluate the application value of rapid detection technology of coliform.Methods Five hundred and twelve samples of food were randomly selected for hygienic detection.The coliform group value was determined after diluent preparation,lactose fermentation,isolation and culture using the rapid detection technology of coliform group.At the same time,the most probable number method shall be used to detect,analyze the two groups of test results,and evaluate whether the tested samples meet the quality standards of food hygiene according to the relevant standards.Results The detection rates of unqualified samples with coliform exceeding the standard were 7.62%(39/512) and 8.40%(43/512) respectively after the lactose bile salt fermentation method and the most probable number method were used,and there was no significant difference between the two methods(P>0.05).Through the analysis of the uniformity of the test results,98.24% of the sample test results were unified,and 1.76% of the sample test results were not unified.Conclusion In the nutrition and food hygiene detection,the application of coliform rapid detection technology can efficiently and accurately detect the coliform group value,and then find out the problem of coliform group exceeding the standard,and timely deal with it,so as to prevent the unqualified food hygiene products from being eaten by people,and fully guarantee the food safety.
