摘要
近些年,火锅、麻辣烫等食品备受广大消费者喜爱,但是一些不法商贩为了谋取利益,向其加入罂粟壳类生物碱,使食客越吃越上瘾,这不但对人身安全造成了伤害,更影响了市场的健康发展。因此,迫切需要建立准确、灵敏、高效的罂粟壳类生物碱的检测方法,来保障食品产业健康发展。文章综述了近年来食品中常见5种罂粟科类生物碱的概况以及检测技术的研究现状,对检测原理和主要检测手段进行了系统分析,汇总了它们的优缺点,展望了生物碱检测技术的发展趋势,笔者认为色谱与质谱联用技术和免疫分析法将会是未来检测罂粟科生物碱的两大主要手段,液相色谱质谱联用技术很有可能成为未来国标方法之一。文章为开发高效、便捷、准确、灵敏的检测技术提供了思路借鉴,为监管部门打击违法添加非食用物质提供了技术支持。
In recent years,hot pot,spicy hot pot and other foods are popular with consumers. However,in order to pursuit profit,some illegal traders add Papaver alkaloids to hot pot and make diners more and more addicted. This not only causes harm to personal safety,but also affects healthy development of the market. Therefore,an accurate,sensitive and efficient method of detecting Papaver alkaloids needs to be established urgently to ensure the healthy development of food industry. This paper reviewed the current status of research about five kinds of Papaver alkaloids,systematically analyzed the detection principle and main detection methods,as well as summarized the advantages and disadvantages of each method and proposed the development trend of alkaloid detection technology. The chromatography-mass spectrometry and immunoassay are thought to be the two main methods for detecting Papaver alkaloids and liquid chromatography tandem mass spectrometry is likely to become one of the national standard method in the future. This paper provides reference for the development of efficient,convenient,accurate and sensitive detecting method as well as a technical support for the regulatory authorities to crack down the illegal addition of nonedible substances.
