摘要
类胡萝卜素作为一种亲脂性四萜化合物,具有增强免疫功能、抗氧化、抗炎、维持视觉功能等多种生物学功能。此外,类胡萝卜素被广泛应用于食品和饲料添加剂,是动物从食物中获取的必需营养素之一。在蛋鸡生产中类胡萝卜素常作为鸡蛋的着色剂使用,同时具有抗热应激、免疫调节等功能。文章就类胡萝卜素的理化性质、生物学功能、制备工艺以及在蛋鸡上的研究进行了综述,以期为开发类胡萝卜素在蛋鸡养殖中的新功能提供理论依据和应用指导。
As a lipophilic tetraterpene compound, carotenoids have many biological functions, such as enhancing immune function, antioxidation, anti-inflammatory, maintaining visual function and so on. In addition, carotenoids are widely used in food and feed additives, and are one of the essential nutrients that animals obtain from food. Carotenoids are often used as egg colorants in layer production, and have the functions of anti heat stress, immune regulation and so on. This paper reviews the physical and chemical properties, biological functions, access and preparation process of carotenoids in laying hens, in order to provide theoretical basis and application guidance for the development of new functions of carotenoids in laying hens production.
