摘要
乳蛋白是奶牛乳汁的重要组成成分,它主要通过乳腺组织吸收血液中游离的氨基酸及小分子蛋白质来合成。乳蛋白的合成会受到日粮营养水平、胃肠道微生物、乳腺血流量及血中氨基酸浓度、血中可利用氨基酸比例、氨基酸载体转运效率等多种因素的影响。文章主要从乳蛋白的合成途径、影响乳蛋白合成的因素、乳蛋白合成相关基因表达及乳蛋白合成信号通路的调控四个方面进行阐述,以期通过改善乳腺对氨基酸的有效利用,为提高乳蛋白合成效率、改善乳品质提供科学依据。
Milk protein is an important component of cow milk,which is mainly synthesized by absorption of free amino acids and small molecular proteins in blood by breast tissue.The synthesis of milk protein will be affected by many factors,such as dietary nutrition level,gastrointestinal microorganisms,breast blood flow and blood amino acid concentration,the proportion of available amino acids in blood,amino acid carrier transport efficiency,etc.This article mainly expounds the synthesis pathway of milk protein,the factors affecting the synthesis of milk protein,the expression of genes related to milk protein synthesis signal pathway,in order to provide scientific basis for improving the efficiency of milk protein synthesis and milk quality by improving the effective utilization of amino acids by the breast.
