2岁雷琼黄牛及利雷杂一代公牛肌肉品质的比较研究 被引量:2

Study on Meat Quality of Two-year-old Leiqiong Yellow Cattle and F1 Bull(Limuzan Cattle♂×Leiqiong Yellow Cattle♀)

摘要 为了研究雷琼黄牛及利雷杂交一代公牛(利木赞♂×雷琼黄牛♀)的肌肉品质,选取2岁健康雷琼黄牛与利雷杂交一代公牛各3头,屠宰后取12至13肋骨间背部最长肌进行肉品质评价。结果发现,利雷杂交一代公牛和雷琼黄牛公牛肌肉pH1h均大于6.0,pH24h均小于6.5,两者间无显著差异(P>0.05);利雷杂交一代公牛肌肉亮度、红度和黄度均显著高于雷琼黄牛(P<0.05);雷琼黄牛与利雷杂交一代公牛滴水损失、蒸煮损失及压力失水率差异不显著(P>0.05);利雷杂交一代公牛眼肌面积显著高于雷琼黄牛(P<0.05),而肌肉剪切力显著低于雷琼黄牛(P<0.05)。综上,与雷琼黄牛相比,利雷杂交一代公牛眼肌面积增大,肉色鲜艳,肌肉嫩度增加,说明利用利木赞牛杂交改良雷琼黄牛效果显著。 In order to study meat quality of Leiqiong Yellow cattle and F1 bull(Limuzan cattle ♂×Leiqiong Yellow cattle♀),three 2-year-old healthy Leiqiong Yellow cattle and three bulls were selected.After slaughter,the longissimus dorsi muscle between 12 ribs and 13 ribs was taken for meat quality evaluation.The results showed that the muscle pH1h of F1 bull and Leiqiong Yellow cattle were greater than 6.0,and the pH24h were less than 6.5,there was no significant difference between the two breeds(P>0.05).The muscle brightness,redness and yellowness of F1 bull were significantly higher than those of Leiqiong Yellow cattle(P<0.05).There was no significant difference in drip loss,cooking loss and pressure water loss rate between Leiqiong Yellow cattle and F1 bull(P>0.05).The eye muscle area of F1 bull was significantly higher than that of Leiqiong Yellow cattle(P<0.05),while the muscle shear force was significantly lower than that of Leiqiong Yellow cattle(P<0.05).To sum up,compared with Leiqiong Yellow cattle,the eye muscle area of F1 bull was larger,the flesh color was bright,and the muscle tenderness was increased,which indicated that the improvement of Leiqiong Yellow cattle by Limuzan cattle crossbreed was significant.
