摘要
近年来随着对健康饮食的重视,消费者群体更趋向于选择无糖或低糖的产品,天然甜味剂由此受到关注。罗汉果甜苷V零热量、高甜度,其甜度约为蔗糖的300倍,且口感与蔗糖相近。我国作为罗汉果的原产地和唯一的种植地,所产的罗汉果或其粗制品常销往海外,具有广阔的市场。本文对近5年来有关罗汉果甜苷的研究进行综述,为罗汉果甜苷与罗汉果相关产业的研究发展提供参考。
In recent years,with the emphasis on healthy eating,consumer groups have become more inclined to choose sugar-free or low-sugar products,and natural sweeteners have attracted attention.Siraitia grosvenorii glycoside V has zero calories and high sweetness.Its sweetness is about 300 times that of sucrose,and its taste is similar to that of sucrose.As the origin and only planting place of Siraitia grosvenorii in China,the Siraitia grosvenorii or its crude products are often sold overseas and have a broad market.In this paper,the research on mogroside in recent 5 years is reviewed,which provides a reference for the research and development of mogroside and related industries of mogroside.
