花生芽中具有降解生物胺活性物质的制备工艺

摘要 为了从花生芽中获得具有降解生物胺能力的物质,对其制备条件进行了优化。本研究通过单因素试验、25-1部分析因试验、Box-Behnken Design(BBD)响应面设计,研究纤维素酶处理和浸提条件对花生芽提取液胺氧化酶活性的影响。结果表明:纤维素酶溶液pH值5.49、纤维素酶质量浓度50.11g/L、浸提体系pH值7.67为最优条件,预测花生芽提取液胺氧化酶活性为23.94U/g。生物胺降解能力试验结果表明,所制备的花生芽提取液对总生物胺降解率达到(89.60±6.73)%,其中对组胺的降解率为(65.94±2.42)%。作为一种新型的具有生物胺降解能力的资源,花生芽存在潜在应用价值。 In order to prepare substances for degradation of biogenic amines(BAs)from peanut sprouts,the conditions of extraction from peanut sprouts were optimized.The effects of cellulase treatment and extraction conditions on the amine oxidase activity(AOA)were studied by single factor experiment,25-1 analysis factor test,and Box-Behnken Design(BBD)response surface design.The optimal conditions for preparing the substances are as follows:cellulase solution pH 5.49,cellulase mass concentration 50.11g/L and extraction solution pH 7.67,and the AOA of peanut sprouts extract is predicted to be 23.94U/g.The BAs degradation ability test showed that the degradation rate of BAs by peanut sprouts extract reached(89.60±6.73)%,and the degradation rate of histamine was(65.94±2.42)%.Peanut sprout has potential application value as a new resource with BAs degradation ability.
