摘要
食物是传染病传播的重要途径之一,其病原体主要包括微生物和寄生虫两类。食物传播病原体主要分为两种情况,一种是食品本身含有病原体,另一种是食品在生产、加工、运输、贮存和销售过程中受到污染,并以病原体污染的食物为媒介,引起传染病的发生和传播。为加强传染病的防控,应对传染病的食物传播途径进行预防。本文将从食品传播途径入手,通过加强食品从业人员及公众的食品卫生安全教育及管理,使其掌握正确的食品选购、加工和储存方法,养成科学、健康的饮食习惯,预防及降低食物途径传播引起的传染病的发生率。
Food is one of the important ways of infectious disease transmission,and its pathogens mainly include microorganisms and parasites.Food-borne pathogens are mainly divided into two situations,one is that the food itself contains pathogens,the other is that the food is contaminated in the process of production,processing,transportation,storage and sales,and the food contaminated by pathogens is used as the medium,causing the occurrence and spread of infectious diseases.In order to strengthen the prevention and control of infectious diseases,the food transmission route of infectious diseases should be prevented.This paper will start from the food transmission route,through improving food practitioners and the public food hygiene and safety education and management,master the correct food purchase,processing and storage methods,develop scientific and healthy eating habits make them,to prevent and reduce the incidence of infectious diseases caused by food transmission.
