摘要
无麸质食品是由一种或多种不含麸质的原料生产或制作的食品。其主要是麸质不耐受人群及腹腔疾病患者的最佳饮食方式。然而,由于目前无麸质食品在中国的关注度较低和大多数无麸质食品的品质较差,多数麸质不耐受人群的饮食需求得不到满足。因此,文章系统介绍了无麸质食品的特点、品质改良和市场发展等,为无麸质食品未来的研究方向和进一步开发利用提供一定的参考。
Gluten-free foods are the edible food products made by gluten-free materials.It is an optimal dietary option for people who suffer from gluten intolerance and celiac disease.However,because of the little attention drawn about gluten-free food in China and the low quality of most gluten-free food,it is far from meeting the diet demands of gluten sensitive people.Therefore,in this paper,the characteristics,research and development status,quality and market situation of gluten and gluten-free foods were systematically introduced to provide some references for the research and development of this kind of food.
