芹菜黄酮类提取物对酪氨酸酶活性抑制作用的研究

摘要 为探究芹菜中黄酮类提取物对酪氨酸酶活性的抑制作用,本研究通过乙醇提取和酶解等优化方法,提取出西芹茎、西芹叶、香芹茎、香芹叶中的黄酮,得出黄酮得率芹菜叶明显高于茎。通过动力学分析测定出对酪氨酸酶的相对酶活力分别为81.18%、29.32%、74.84%、8.97%,以及酶抑制率分别为18.82%、70.68%、25.16%、91.03%。结果表明,芹菜叶对酪氨酸酶活性的抑制作用较茎强,为后期酪氨酸酶抑制剂的提取提供实验基础,为开发芹菜作为天然抗氧化剂和美白剂原料提供理论依据。 In order to explore the inhibitory effect of flavonoids extract from celery on tyrosinase activity,the flavonoids was extracted from celery stalk,celery leaf,parsley stem and parsley leaf through optimization methods such as ethanol extraction and enzymatic hydrolysis,and obtained that the yield of flavonoids from celery leaf was significantly higher than that from stem.The relative activity of tyrosinase was 81.18%,29.32%,74.84%and 8.97%,and the inhibition rate was 18.82%,70.68%,25.16%and 91.03%,respectively.The results showed that celery leaves had stronger inhibitory effect on tyrosinase activity than stems,which provided experimental basis for the extraction of tyrosinase inhibitors and theoretical basis for the development of celery as a natural antioxidant and whitening agent.
