摘要
安溪铁观音以其独特的“观音韵”闻名遐迩,闻香“如兰似桂”。本文在概述兰花香气成分、桂花香气成分和木兰科植物玉兰、白兰等的香气成分的基础上,将铁观音的独特香气品质与这些花香成分进行对比分析。总结花香形成与释放的影响因素,针对铁观音香气研究现状,通过借鉴花卉香气成分的组成、花香形成与释放机理,为铁观音独特香气形成机理的揭示提供一种新思路。
Chemistry of the renowned aromatic quality of Anxi Tieguanyin oolong tea that carries the unique floral connotations dedicated as"Guanyin Fragrance"by tea connoisseurs was studied.The exquisite characteristic was analyzed by comparing the volatile components in the tea with those in orchids and flowers of osmanthus and some Magnoliaceae plants.The formation and release of the key aromatics in these flowers were superimposed on Tieguanyin tea to hypothesize a mechanism for the generation of"Guanyin Fragrance".
