摘要
氯霉素是一种高效的抑菌广谱抗生素,曾广泛应用于畜禽类及水产品的生产加工制造过程中。由于食品中的氯霉素残留会对人体健康产生极大危害,目前美国、欧盟以及中国都出台了相关法律法规,禁止氯霉素用于动物疫病治疗,且在食品中不得检出。但由于其成本低廉,效果好,非法使用氯霉素的现象仍然屡禁不止。因此,建立快速便捷的食品中氯霉素残留检测方法对保障食品安全具有重要作用。本文主要从信号分类的角度介绍了近些年氯霉素快速检测技术方法,主要包括比色法、荧光法、电化学法、表面增强拉曼光谱法以及化学发光法等,并对各种方法使用的新型材料、优缺点以及检测效果进行了报道和分析,以期展示出目前氯霉素快速检测的研究进展及发展趋势,为我国氯霉素快速检测提供一定的帮助。
Chloramphenicol,a highly effective bacteriostatic broad-spectrum antibiotic,has been widely used in the production and processing of livestock,poultry and aquatic products.Its residues in food can cause great harm to human health.Nowadays,in the United States,the European Union and China,laws and regulations have been set for prohibiting the use of chloramphenicol in animal disease treatment and it should not be detected in food.However,due to its low cost and good effect,it is difficult to completely eliminate the illegal use of chloramphenicol.Therefore,it is important to establish a fast and convenient method for detecting chloramphenicol residues in food.This review briefly introduced the rapid detection technology of chloramphenicol in recent years including colorimetry,fluorescence,electrochemistry,surface enhanced Raman spectroscopy and chemiluminescence.The advantages and disadvantages of new materials and detection efficacy used in various methods were compared.Meanwhile,the future development direction was prospected.It provides references for establish a rapid detection of chloramphenicol in China.
